The new Café opens in May and will serve breakfast and lunch year-round. Joanne Wigston and her husband Andrew have always had an entrepreneurial spirit and have owned several businesses over the years.
“We will also be expanding the production and distribution of Island Gelato, which is similar to ice-cream but is churned at a slower rate and has less air so it is a denser product,” says Joanne. “It is made with milk instead of cream, so it is lower in fat.
“Island Gelato is sold at the Summerside Farmers Market, and we plan to get it into local stores and restaurants.” They will also offer vegan dairy free gelato made with coconut milk and keto-friendly options. All products are made in-house with locally-sourced ingredients.
